Measure & grind
Use 15 g of coffee (1 heaped scoop) per mug (250 ml water).

Heat your water
Boil your kettle, then leave it to cool for about 30 seconds.
Aim for 94 °C (just off the boil). This protects sweetness and avoids bitterness.

Add coffee & water
Spoon coffee into the cafetière.
Pour in half the hot water and stir to make sure all the grounds are wet.
Top up with the rest of the water and place the plunger on top (don’t press yet).

Steep
Let it brew for 4 minutes.
This immersion time brings out balance and body - smooth cups without sharpness.

Plunge & pour
Press the plunger down slowly and steadily.
Pour straight away - leaving it sitting makes the coffee keep extracting and taste bitter.
